Reverser Co., Ltd. develops fish freshness preservation technologies in Kushiro, Hokkaido — the eastern edge of Japan, one of the world’s richest fishing grounds. We do not sell fish. We develop and license the methods, know-how and instruments that let producers deliver fish and sea urchin at their best condition.

ZERO-SHIFT
Sea urchin was said to be impossible to freeze.
Modern freezing technologies — rapid freezing, 3D, liquid, CAS — were developed for muscle tissue. Sea urchin is not muscle. It is gonad. A different tissue needs a different approach.
In August 2026, we completed a thawing test on sea urchin that had been frozen for 24 months. Colour, grain, edge definition, texture and taste showed no degradation. The frozen samples were stored at the Kushiro Industrial Technology Center and thawed at the Kaneki Kimura Suisan plant in Kushiro.
Our aim is not to improve the taste.
It is to keep the taste from moving.
The benchmark is not “delicious” in general terms. It is the producer’s own, unfrozen sea urchin. What the producer built, delivered unchanged.
FOR PARTNERS
We are open to licensing agreements with freezing equipment manufacturers, and to technical advisory work with fisheries, processors and aquaculture operators — including newcomers entering the industry from other sectors. Enquiries in English are welcome.
